Chicken Salad Chick opens its first store in Louisville

Chicken Salad Chick opened its first restaurant in Louisville yesterday.

The “Southern-inspired, quick-laid-back” chain opened at 12009 Shelbyville Road in Middletown, replacing what was once a Raising Cane. The restaurant will be Kentucky’s sixth Chicken Salad Chick franchise, although the Alabama-based chain has more than 200 locations in the South and Midwest.

This Chicken Salad Chick location, which has a dining area and drive-thru, of course serves chicken salad, as well as other types of salads, soups, sides and desserts.

The restaurant is hosting a number of promotional events by Saturday: today, the first 50 customers to purchase a “Chick Trio” (a scoop or sandwich of chicken or egg salad, plus two more scoops, sides or cups of soup) will receive a branded cup. Tomorrow, the first 100 customers to purchase a Chick Meal will receive a free branded koozie and buttercream cookie. On Saturday, the first 50 guests to purchase two Large Quick Chicks will receive a free chili cheese ball.

In a press release, owner Laney Bittingham said, “After my eight years of managing Chicken Salad Chick locations in Georgia and Florida, and as a District Manager for the brand, I am delighted to hold a new owner role as part of the Chicks Team bringing this southern favorite made from scratch to Middletown. We are excited to continue to grow our footprint in Kentucky and provide the Middletown community with a southern favorite of Chicken Salad Chick.
