Breadfruit
This is a must try when visiting the Caribbean. Breadfruit can be prepared in several ways such as pickled, chips (fried or baked in the oven), mashed as cou cou or roasted whole and stuffed with seasoned meat. Depending on the ripeness of the breadfruit it is better suited to certain dishes, and it can be easily boiled and frozen until needed. It was first brought to the Caribbean several hundred years ago by Captain Bligh, and the trees not only survived but thrived.
Cou Cou
ImageThis is another dish that has been in the region since slave times. It is made from corn meal and water, and in Barbados, okras, and best served with a stew. Traditionally, cou cou is a high energy food to prepare as it requires much stirring, however, it can be made in the microwave - 1 cup of fine cornmeal, 1 cup water, 1/2 tsp salt, butter, 3 okras finely chopped. You may need to add a little extra water after the second or third minute. Put cornmeal, salt and water in a microwaveable bowl (preferably glass), stir well and microwave 1 minute. Stir thoroughly, microwave 1 minute. Stir in okra and butter. Microwave 1 minute, stir, microwave 1 minute, stir, microwave 1 minute, stir, microwave 1 minute (total 6 mins). Let sit a few minutes and voila, cou cou.
Doubles
ImageThis is another food originating in Trinidad and made with Indian spices, but it has gradually spread to the north and south and is available, usually from roadside vendors, in several neighbouring islands. It is traditionally a breakfast food, but in my opinion, a good double can be eaten anytime, day or night. There is an outer shell which is filled with curried channa (chick peas) and folded over. Again, you can usually request the amount of hot pepper that you would or would not like in your doubles.
Guava
Guava is a fruit found throughout the Caribbean, both as a crop and in the wild. The green skin and white or pink flesh contain high levels of vitamin C, antioxidants, fibre and lycopene, making this a very healthy fruit. The skin and leaves are also excellent astringents. Guava can be eaten raw or made into a drink, stewed as a dessert, jelly, jam and "cheese" - a fudge-like sweet.
Roti
Rotis are found in most of the Caribbean though they originated in Trinidad, and can contain curried anything. The roti bake (wrap) is made from split pea flour, curry powder and other Indian spices and seasonings. Any meat or vegetable can be curried and wrapped in the roti. Nowadays you can usually request the amount of hot pepper you would like in your roti. Something not to be missed when visiting the region, but check with the locals for the really good ones.
Salt Fish
Salted fish (usually cod) is a traditional food prepared in a variety of ways throughout the Caribbean. It was first introduced by the Portuguese as a cheap food for the slaves. Supplies then came from Canada as it was more economical. The fish is soaked in water for several hours or boiled to remove the salt prior to preparation. Each island has it's traditional way of preparing the salted fish, such as salt fish cakes, salt fish stew, salt fish and ackee and countless other tasty dishes. It is also popular as a breakfast food.
